The grapes were handpicked from three sites in the Waitaki Valley. The grapes from each vineyard were kept separate and de-stemmed into open top fermenters, with a small portion as whole cluster.
Each fermenter was cold soaked for a week before being inoculated with selected yeast strains. Daily hand plunging was carried out during fermentation, followed by 1-2 weeks post ferment maceration before going to French barrels. Malolactic fermentation was carried out in the spring.
The final blend was put together after 12 months in barrel resulting in 42% new oak. Blueberries and violets mingle with toasty oak, warmly expressed in a succulent, juicy, lingering palate.The grapes were handpicked from three sites in the Waitaki Valley.
